If you are familiar with our product or have been following us for a while you know that our bread is frozen after baking and delivered frozen to our customers.

We have spoken about the benefits of frozen bread in previous posts, especially in reference to its storage. By freezing the pita, we are ensuring it preserves all its flavour, texture and nutritional properties and it also makes it very user-friendly for our customers as it is easy to store in the freezer and when they want to use it all they need to do is pull it out and defrost it.

What if we told you that by freezing the pita we are also making it healthier?

Pita bread is a pretty healthy kind of bread as it already has a low glycaemic index, but it turns out that by freezing the bread before we eat it the glycaemic index decreases even further. The glycaemic index (GI) is a measure of how quickly a food can make your blood sugar rise.

Fresh bread produces spikes in blood sugar levels, but these spikes are reduced if you freeze the bread before consuming it.

A research study published in 2008 by the European Journal of Clinical Nutrition
shows that the starch in bread changes when the bread is frozen. In fact, the starch becomes more resistant and this helps to stabilise blood sugar levels. In addition, when we freeze bread the starch is transformed into a starch which is much healthier for your microbiome. Once frozen the starch becomes more resistant and promotes the beneficial bacteria in your gut as well as regulates your digestion in general.

Other studies expand on and support this information, such as the study carried out by Oxford Brookes University in 2016.
